La Vecchia Dispensa is a historic family-operated acetaia located in Castelvetro di Modena, a picturesque medieval village in Italy’s Emilia-Romagna region.
The family has produced balsamic vinegar since 1905 and holds production and trade license number 13, one of the oldest licenses for Balsamic Vinegar of Modena. Through generations, the family has preserved the methods, recipes, and aging traditions that define authentic Modenese balsamic vinegar.
The oldest family barrels are still housed inside a historic tower dating to the 16th century. Within this remarkable setting, balsamic vinegar develops slowly as it responds to the changing seasons, the surrounding environment, and the character of the wooden barrels in which it rests.
Aged in Cherry Wood Barrels
The Gold Label is matured in cherry wood barrels, which give the balsamic its naturally dense texture, full-bodied flavor, and distinctive notes of cooked fruit and ripe cherries.
Traditional Handcrafted Production
Made in Castelvetro di Modena from cooked grape must and wine vinegar, this balsamic is carefully aged in a single type of wood. Its thick consistency and balanced acidity develop naturally without the need for reduction.
